Bad Chef Salsa Chicken, Roasted Pepper, & Rice

via BudgetBytes: rice, “salsa chicken,” roasted bell peppers — My quick notes.

  • 2 boneless, skinless chicken breasts
  • 16oz salsa
  • 1/2 cup chicken broth
  • 1 tsp chili powder

Combine ingredients & cook in sauce pot. Boil, lidded, then simmer 30 minutes.

Remove & shred the chicken, then re-combine shredded chicken with salsa/broth mixture.

Combine with rice & peppers for meals.
